For the 4th this year we had a quiet day at home with our families, since all the public events and fireworks shows closed for COVID. Since we were’t going to go out anyway, I wanted to do a holiday dinner party which I have never done for the 4th. I pulled out my wedding cobalt vases and filled them with red and white flowers. I loved how the vibrant cobalt matched with my vibrant red goblets. I decided to go with a flag theme, and designed some name tags and stars and stripes confetti that I cut out with my Silhouette. I tried to match the food with the red, white and blue theme as much as possible, so I made some cheese boards in those colors for an appetizer and strawberry salad with a strawberry vinaigrette. I recently found this recipe for peach basil chicken and we love it so much that it has quickly became a favorite that I frequently make, and I thought it was a great summer entree that I wanted my family to try. The first time I made it I also made Yorkshire puddings, and Vu loved it that way so much that he only wants me to serve it with them. Which works for me because I love Yorkshire puddings so much. Then for dessert I made a red, white and blue fruit + brownie bites plate with creme anglaise. It was all so delicious! Afterwards we waited for a while until it got close to dark and lit some sparklers (I told Vu to do something fun and he just did circles… 😂) and watched my neighbors home fireworks from our balcony. It was a perfect night with one of our beautiful Snoqualmie sunsets and a bright full moon rise.
